With the constant rush to make it to school on time, students tend to miss an important part of their morning on a daily basis: breakfast. Lacking time to make something before school, students may choose to eat unhealthy foods or skip breakfast altogether. In search of a better option, students can make these quick and easy recipes. Each recipe takes 15 minutes on Sunday night to prepare breakfast for the entire week.
Chocolate Craisin Granola
- 2 cups of toasted rice cereal
- 1.5 cups of quick cooking oats
- 1/4 cup of chopped almonds
- 1/4 cup of roasted peanuts
- 1/4 cup of craisins
- 1/3 cup of mini chocolate chips
- 1/2 cup of honey
- 1/2 cup of brown sugar
- 1/2 cup of creamy peanut butter
- 1 tsp of vanilla extract
Directions:
- Mix the toasted rice cereal, quick cooking oats, almonds, peanuts and craisins in a large bowl.
- Heat 1/2 cup of honey and brown sugar to a boil in a small saucepan.
- Once the honey and brown sugar are boiled, remove from the stove and immediately add 1/2 cup of peanut butter and 1 tsp of vanilla extract.
- Add this with the dry ingredients and stir until the dry and wet ingredients are thoroughly mixed.
- Add 1/3 cup of chocolate chips.
- Pour the mix into an 11 x 7 pan.
- With wet hands, start patting the mix into the pan so that it tightly packs in.
- Chill until firm.
- Cut the granola into 16 bars.

Peanut Butter Cereal Bites
Ingredients:
- 5 1/2 cup of toasted oats cereal (any flavor)
- 1 cup of crunchy peanut butter
- 1/2 cup of honey
- 1/2 tsp of vanilla extract
Directions:
- Put 5 1/2 cups of toasted oats cereal in a large bowl.
- Heat 1 cup of crunchy peanut butter in microwave for 40 seconds.
- Take out of the microwave, stir and add 1/2 cup of honey.
- Once you add the honey in, stir and put back in the microwave for 30 seconds.
- Add 1/2 tsp of vanilla extract.
- Add cereal to this mixture and stir until well coated.
- Scoop the cereal bites using a tablespoon onto parchment paper or foil. They should be slightly larger than bite size pieces. (This may take 2 pans.)
- Let them sit and harden for three hours. (To speed process, refrigerate them.)
